Over the last few years since my Hubby (Charles) and I went plant-based, I have been DESPERATELY searching for a waffle recipe. But not just any waffle recipe- a good one. Like, a really GOOD one.
And guess what?
Well, I was left immensely disappointed each time. Finding a plant-based waffle recipe was easy, sure. Finding a gluten-free waffle recipe was also easy. But finding a plant-based gluten-free waffle?
That proved to be impossible.
I mean, don’t get me wrong. Of course I found SOME recipes- and they were all okay. But everything I tried never really fit what I was looking for…
I like waffles that are crunchy on the outside and soft on the inside.
Ones that are easily adaptable to suit my daily wants- like adding berries or dark chocolate chips.
And ones that actually TASTE good! Haha.
So, needless to say- that’s when I started to experiment to find a combination that really worked and hit all of the points I mentioned above.
And I am SO happy with the final result!
If you are also plant-based and gluten-free, I can promise you that this is the version you have been searching for!

Anywhooooo, here you go:
INGREDIENTS
- 1 cup blanched almond flour
- 1/2 cup tapioca starch
- 1 tsp baking powder
- 1 tbsp ground chia seeds + 3 tbsp water
- 1/2 cup plant milk
- 2 tbsp apple sauce
- 2 tbsp almond butter
- 1 tsp apple cider vinegar
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- 1/4 tsp pink Himalayan salt
DIRECTIONS
STEP 1: Combine the ground chia and water in a bowl, whisk together and set aside to thicken.
STEP 2: Add the almond flour, tapioca starch, baking powder, and salt in a large mixing bowl and mix together.
STEP 3: Add in all remaining ingredients and whisk together. Stir in the chia egg.
STEP 4: Heat a waffle maker and add a touch of coconut oil to prevent sticking.
STEP 5: Use a ladle to scoop out the batter into the waffle maker. Repeat until all batter has been used. Serve with maple syrup and berries. Best if eaten right away 🙂
