Orange and Clove Vegan Muffins (GF)

In the last few months hubby and I have been focusing even more on switching our chemical-laden products to more natural options. 🌱

As you’ve heard me say before- I love to follow the rule of replacing items with a healthier option as we run out of the other variations. Not only does this allow the transition to be slower and more sustainable, but it also prevents it from being a huge expense! 👏🏻

So basically, instead of throwing out all of the ‘unhealthy’ or ‘chemical-filled’ products tomorrow and having to go buy new ones (wasting a ton of money and drastically increasing stress), you simply use up what you have and replace them with better options as you run out 😊🙏🏻 I not only follow this rule with nutrition, but also with household/beauty/hygiene products too!

In this process I’ve of course been choosing to make more things homemade- and when I can’t make them or haven’t found the time to attempt it yet, I do try to support as much local business as I can! 🙃

So, we’ve recently been switching over our ‘all purpose cleaners’ and hand soaps from the versions we were buying, and I’ve been super tempted by the holiday scents as of recently. 🎄🎁

One of the ones that I have been OBSESSED with (and hubby loves as well), is ‘orange clove’. 🍊 This scent makes me so happy and literally smells good enough to eat- but I have had enough sanity not to try 😂🙈

So anywho, it got me thinking about how good it would taste as a muffin recipe- and today I finally said enoughs enough and headed to the kitchen to experiment.

And guess what?

It actually only took me one try to nail the recipe from scratch while making it entirely up 🤷🏼‍♀️😂👌🏻

The result?

Well, it’s freaking delicious 😍

I suppose this recipe will probably be taste specific, as I can imagine not everyone would like the flavour combo. But if you like both of these flavours or like me, have been tempted to eat soap with this scent- then this recipe is definitely for you! 🙌🏻

INGREDIENTS

  • 3 bananas, mashed
  • 1/4 cup fresh squeezed orange juice
  • 1/4 cup unsweetened almond milk (or other non-dairy milk)
  • 1 chia egg (1 Tbsp. ground chia & 3 Tbsp. warm water)
  • 1/4 cup coconut palm sugar
  • 1 1/2 cup GF whole grain oat flour
  • 1/2 tsp. Ground cloves
  • 1 tsp. baking soda
  • 1/2 tsp. baking powder
  • Zest of 1 orange

DIRECTIONS

STEP 1: Preheat oven to 350° degrees. Make chia egg, set aside to thicken. In a separate bowl, mash bananas and stir in coconut sugar, orange juice and almond milk.

STEP 2: Once chia egg is set, mix in well to banana mixture. Add zest of orange and if there is any pulp from juicing the orange, feel free to add that in as well. Stir in cloves and baking soda. Mix in oat flour. Allow to sit for a few minutes.

STEP 3: Coat mini-muffin tin with coconut oil and scoop batter into each muffin tray ¾ of the way full. Bake for 20-25 minutes or until a toothpick comes out clean. Allow to cool for at least 5 minutes.
